## Description
These warm flour tortillas rolled around an egg, cheese, and spicy sausage filling are perfect for breakfast on a rushed weekday morning.
## Ingredients
- 4 ounces chorizo, loose or removed from its casing
- 2 large eggs
- 2 teaspoons reduced-fat milk
- Pinch kosher salt
- Pinch freshly ground black pepper
- 2 (8-inch) flour tortillas, warmed
- ¼ cup shredded cheddar cheese
## Instructions
1. Heat a medium skillet over medium-high heat. Add the chorizo and cook, stirring and breaking up the meat with a spatula, for about 5 minutes, until browned. Drain the excess fat from the skillet.
2. In a small bowl, whisk together the eggs, milk, salt, and pepper. Add the egg mixture to the skillet with the chorizo and cook, stirring, for about 3 minutes, until the eggs are fully set.
3. Lay the tortillas on a work surface, and spoon half the egg mixture into the center of each tortilla. Sprinkle the cheese over the filling.
4. Fold the sides of each tortilla over the egg filling, then roll up the burrito from the bottom to the top. Serve immediately.
## Optional Finishing Touch
Before rolling up the burritos, add chopped fresh cilantro, thinly sliced scallions, or salsa.
## Variation
For a vegetarian version, substitute soy chorizo (which is just as delicious) for the chorizo.
